Should I do it - is it really difficult?

Due to crowding issues on the bottom that is beginning to effect my top, the Ortho recommends Invisalign. I realize I can overthink things quite a bit but learning about the acid issues, now I'm considering maybe not doing it at all...being mid 50s and no cavities since childhood, I don't want to do something that can cause problems now. The thought of not being able to randomly pop something into my mouth on a whim is also really bothering me...not to mention, I drink unsweetened, brewed green tea and flavored (but unsweetened) sparkling water all day everyday. I hate flat water for sipping. I love to go wine tasting and I only drink red wine....how can you do that if you have trays in your mouth and you have to worry about the acid causing cavities? Or going out and having chips and salsa and margaritas? Or having friends over for a meal where you nibble for a couple of hours then have dinner? Food can be an event - do you keep them in the entire time? I've read that Xylitol products can help greatly when you can't brush...then I've read to wait 30 minutes after a meal to brush...surely this can't be that complicated, right? I'm sure it sounds silly, but these things keep me up at night as I ponder what I should do. Advice appreciated. 😊

EDIT to add that I also consume quite a bit of Indian food/turmeric and I've read that even swishing after eating and brushing afterward can result in stained trays/teeth.
