Paris recommendations - Changing Epicure Res

Decided to (heartbreakingly) cancel our rez at Epicure in early November. With the menu switch and chef change, just not feeling the most comfortable with it, considering how $$$ it is. Would still like to enjoy a 3 star, or even 2, during our few days in Paris. Looking for same price-ish as Epicure, going for dinner and not lunch, offers a tasting menu (only interested in a tasting), and more or less French cuisine. Guy Savoy is out (too expensive), L'Ambroisie doesn’t offer tastings, and Arpege reviews are quite mixed. What’re everyone’s thoughts on: Le Gabriel, Alleno, or Le Taillevent? Not sure if I’ll even be able to make a rez at any of these for sure because it’s so last minute, but I’ll certainly try! Will also try to throw Septime in once reservations open. Thank you!!
