Dialing in Y05 Thermal Shock

The Panda PsyOp worked.

Both of the bags I ordered were roasted on 9/13. I’ve tried both of my standard recipes on each bag, and the Geisha comes out wonderfully with full flavor notes but I’m really struggling to dial in the Diego Bermudez. It keeps over extracting a bit, and I’m not getting the bright and acidic fruit notes I want out of it. The first recipe I used is one I made for another thermal shock (Perc Los Nogales Columbia), and the second is a fairly standard recipe I found online. Any advice would be appreciated!

Gear: 1zpresso JMax-S, Fellow Stagg EKG at 95C, V60 with stock filters, Third Wave Light Roast Water

Recipe 1 - 16:272 (1:17)

  1. 50g bloom (0:00-0:45)
  2. 135g heavy spiral pour up to 185g (0:45-2:00)
  3. 35g light spiral + 50g center pour up to 272g (finish at ~3:15-3:30)

Recipe 2 - 15:250 (1:16.67)

  1. 45g bloom (0:00-0:45)
  2. 120g spiral + 85g quarter-sized circle pour in center up to 250g (finish at ~2:30)
