How should I brew this coffee!

I just picked up this bag of beans from a local roaster. I’ve been having a heck of a time brewing decent coffee, even with decent beans and a Baratza Encore grinder. Can someone recommend precise brewing directions for these Costa Rican honey process beans, using a Clever Coffee Dripper? My palate thanks you in advance!
