How do you escalate during a quick coffee date?

The overwhelming consensus on all the dating subreddits is that the coffee is one of the best options for a first date because it's low-stress, casual and doesn't involve a large investment in time or money. But for a quick 1-2 hour coffee chat in the adternoon, how are you supposed to physically escalate with your date? If I take a girl for dinner and drinks, I have basically the entire night to build up sexual tension, flirt with her, hold her hand and finally go for the kiss at the end of the night. But if we're only meeting for a quick coffee, how am I supposed to escalate? Going for the kiss at the end of a coffee date would be quite abrupt if we're only meeting for such a short time. Should I just treat the initial coffee as date zero and then wait until the next date to be more physical? Or should I still try to initiate physical touch even if we're only grabbing a quick coffee? And if so, how?
