No-code Protecting User Info for Cookies

Hey everyone, I'm working on securing user information on my client's website that uses analytics cookies from Google Analytics. I used the Finsweet Cookie Consent tutorials and did the coding myself, but I'm struggling to understand if the cookies are already protected via Google or Finsweet's code, or if there is an extra step? I looked it up and saw something like HTTP cookies, but I think Google already uses that... any knowledge or help would be greatly appreciated!
