Opinions needed on Veggie entrees from caterer

I'm not a vegetarian, nor is FH, and so we aren't sure which to one to choose. Our proteins are salmon and steak, and our caterer has 10 options we can choose from for the vegetarian option, and we're both at a loss of which choices look great (or terrible). When we had our tasting, we only could choose two entree types, so we did the salmon & steak. We LOVED everything we tried, and are confident in the overall quality of the food from the vendor. Any and all thoughts on the following choices, lemme know in comments:

  2. Chickpea Cakes with Israeli Cous Cous Arugula Salad, Tzatziki, Roasted Tomato, and Crispy Garbanzo Beans
  3. Grilled Vegetable Garden with Vegan Basil Aioli, Grilled Baby Romaine, Farro Salad, Roasted Seasonal Vegetables
  4. Oyster Mushroom Scallops with Charred Scallion Cous Cous, Corn Puree, Black Lentils, Grilled Corn Succotash, Burnt Scallion
  5. Roasted Acorn Squash with Garbanzo Bean Salad, Crispy Tofu, Sautéed Spinach, Roasted Tomato
  6. Roasted Portobello Mushroom with Arugula Pesto, Tabbouleh, Pepperonata, Celery Leaf
  7. Sesame Soba Noodles with Crisp Tofu, Tsuyu, Aromatic Vegetables
  8. Stuffed Baby Eggplant with Bulgar Salad, Tomato Basil, Sautéed Kale, Roasted Tomato, Crispy Garbanzo Beans
  9. Porcini & Asparagus Ravioli with Rosemary Cream, Porcini Mushroom, Grilled Asparagus, Shaved Parmesan & Pine Nuts
  10. Roasted Beet Tart with Golden Beat Puree, Sautéed Beet Tops, Whipped Goat Cheese, Lemon Ash, Roasted Radish

Wedding is in October, so I'm not sure if having the acorn squash option is best for seasonal purposes, do guests even care about that in the first place?
